The second edition of 1931 rum by St Lucia Distillers, bottled in 2012 to celebrate 81 years of rum production on St Lucia. This series epitomises the approach of SLD in their nuanced blending styles from an array of rum distillates. The second edition uses rum distillates from 2004, 2005 and 2006 from the distillery’s three copper pot stills and two Coffey column stills. The various rums were matured in American oak casks and 2 port casks before blending and marrying in American oak for a final three months.
